Citrus Olive Oil Cake


·     2 cups flour

·     1 tsp. salt

·     1 tsp baking powder

·     ¼ tsp. baking soda

·     ½ cup Persian Lime Olive Oil

·     ½ cup Lemon Olive oil

·     1 ½ cups sugar

·     3 eggs (room temperature)

·     1 T fresh lemon zest

·     2 T fresh lemon juice

·     1 ¼ cup milk


·     Preheat oven to 375 degrees

·     Line bottom of (2) 8” round cake pans with parchment paper.  Lightly oil and flour pan.

·     Mix flour, salt, baking powder, and baking soda.  Set aside.

·     In mixer, beat sugar, eggs, and lemon zest until combined and fluffy.

·     Turn mixer to low and add each (lime and lemon) oil until mixed well.  Add milk and fresh lemon juice

·     Add flour mixture (small amounts at a time) until combined.  Scrape edges of mixing bowl with spatula until everything is incorporated and mixed well.

·     Pour mixture into prepared pans.  Bake until toothpick inserted in center comes out clean.

·     Cool for 30 minutes.  Run knife around sides of cake pans and invert onto a plate.  Peel off parchment and invert back onto cooling rack until fully cooled.

·     Store tightly sealed in plastic wrap.  Will keep for 4 (plus) days.
