Maple Caramel Pecan Bars

(recipe adapted by Max Winkler)



·      1 cup (2 sticks) or ¾ cup Oli+Ve butter infused olive oil 

·      ¾ cup sugar

·      1 large egg

·      1 egg yolk

·      1 ½ t. vanilla

·      2 cups flour

·      ½ t. salt

Caramel: (substitute for 2 cups of premade/store bought)

·      2 cups sugar

·      12 T of butter, cubed 

·      1 cup heavy cream

·      1 t. salt

·      1 T vanilla

·      2 T Oli+Ve maple balsamic reduction

·      10 oz. chopped pecans


Directions (caramel):

·      In a saucepan, on medium heat, add sugar and constantly stir with a wooden spoon until sugar is melted

·      When the sugar turns an amber color, quickly add the butter and stir until combined

·      Remove the pan from heat and add in the heavy cream

·      Add salt, vanilla, and balsamic reduction

·      Stir in pecans

Directions (cookie)

·      Preheat oven to 350 degrees

·      Cream together the butter and sugar

·      Add the egg, egg yolk, and vanilla

·      Slowly incorporate the flour and salt until well combined

·      In a lined 8X12 baking dish, spread the dough evenly

·      Bake for 15-20 minutes until dough has a slightly golden color

·      Pour caramel pecan on top of the cookie and spread evenly

·      Bake for 15 minutes and cool

·      When serving, heat a glass of water and dip a large knife into the water to cut the bars easier
