Chocolate Mint Cookies

Chocolate Mint Cookies


·      ½ cup Oli+Ve mild EVOO (extra virgin olive oil)

·      1 cup sugar

·      2 eggs

·      ¾ cup flour

·      ¾ cup unsweetened cocoa powder

·      ½ t salt

·      1 t baking soda

·      1 T hot water

·      1 t vanilla

·      ½ cup Andes Chocolate Mints, finely chopped

·      1 cup chocolate chips



·      Preheat oven to 350 degrees

·      Mix together olive oil and sugar until well combined.

·      Add the eggs, one at a time, mixing completely after each one

·      In a separate bowl, mix together the flour and cocoa powder

·      In small amounts, slowly mix the dry ingredients into the wet

·      Combine vanilla, water and baking soda and add to the mix

·      Stir in the chocolate

·      Refrigerate dough for 30 minutes

·      Place a tablespoon of dough onto a lined baking sheet with a little space between each cookie

·      Bake for approximately 7 minutes
